Workshop Description
Discovered Foods, an award-winning wild game providore based in Beechworth, teams up with Chef Jessica Hercott to bring you a bold, immersive dining experience that celebrates the best of local and sustainably sourced ingredients. At the heart of this feast is Discovered’s mission: ethically harvesting wild game from the Victorian High Country, helping protect native habitats while creating world-class, sustainable food. This multi-course menu showcases the deep, slow-cooked complexity of wild venison alongside vibrant seasonal produce—think venison backstrap with salsa verde, roast cabbage with mushroom XO, and Cumberland sausage with remoulade, all cooked over fire and served in the open air. Set against the stunning backdrop of Chiltern, this one-night-only event is an opportunity to connect with the land, the food, and the hands that prepare it. Cancellations can be made online until 72 hours before start time - 5% cancellation fee applies. Cancellations can be made online until 24hours before start time - 50% cancellation fee applies. No refund for later cancellations.
